Coalfish in sour cream, with caramelized onion and potato

Coalfish (thick fillets)
– cut in portion sizes and drizzle dried spices on them.

sour cream (2,5 dl)
1ss butter
salt, pepper, dried garlic, thyme
Fresh chives

Potato (in Norway we call the type of potato used “almond potato”, but I am not sure if that is correctly translated).

Actually – this is a result of a mistake I made, in a stressful weekday just wanting food on the table. I was supposed to make coalfish steak in sour cream – a traditional dish in Norway. Which is kind of like this one but I forgot something important – to dip the fish fillets in flour, salt and pepper and then frying it on both sides before doing the rest.

So I browned the butter in a frying pan, put in the fish, poured sour cream over it, added the chopped chives and put on a lid to steam it on really low heat. Put the potatoes to boil whilst doing this. Caramelize onion slices in a frying pan in a little butter.
Add the onions on top of the fish, make sure its cooked throughout and serve with thin crisp bread. A trick is to blend the fish, potato and sauce on top of a thin crisp bread and dig in. The mistake turned out ok after all ;-p
